This is a real treat. The Horse Heaven Hills region, in the very southwest of Washington State, produces over a quarter of all the state's wines. The area grows a wide variety of grapes, with bold reds such as Cabernet Sauvignon and Syrah topping the list.
This bottling is a perfect example of the varietal, with all the flavors and aromas we expect from a great Cabernet. The inky black opaque color promises dense aromas of black plum, rich blackberry, and a delicate note of cinnamon. The structure is excellent, jammy and condensed, with soft tannins and a finish that goes on forever.

Walnuts contain tannins, which complement the structure of the wine. And the saltiness of the cheese softens and rounds out the overall structure. This is a classic pairing and well worth a try.
